A Tradition Rooted in Herbs
Byliny in Bilk reimagines classic home cooking with seasonal flair.
"Byliny = herbs" – the words gleam in gold against the petrol-blue walls. Yet the declaration feels almost redundant: verdant herbs appear in virtually every dish, whether as a vibrant salad, silky sauce, or delicate garnish. While the name "byliny" derives from Slovakian, the cuisine draws its inspiration from elsewhere. Rather, Byliny represents a culinary philosophy that feels perfectly at home in Bilk: refined home cooking of a kind that has become increasingly rare. Time-honored dishes – roulades, cordon bleu, braised pork cheeks – are thoughtfully reimagined here, dressed in contemporary combinations and fresh interpretations. The kitchen draws generously from seasonal abundance, ensuring each plate delights the palate. Owners Norman Metzing and Micha Caasmann, both veterans of Düsseldorf's Hyatt Hotel, oversee a team that includes Caroline, previously of the Breidenbacher Hof. Their commitment to hospitality extends to every detail – in summer, this includes welcoming tables on the sidewalk. The interior, crafted by Düsseldorf-based SOHOarchitekten, centers on those petrol-blue walls, against which the verdant herbs and brass-toned minimalist bar seem to radiate with particular intensity. A botanical artwork by Stefan Kaluza commands the room's far end, subtly expanding its elongated proportions. "Young, fresh, cool – yet steeped in tradition" – Byliny's motto captures its essence, both culinarily and aesthetically.
