Tradition with herbs
The Byliny in Bilk offers classic home-style cooking with a seasonal twist
"byliny = herbs" is framed in gold somewhere on the petrol blue wall. Actually, this is almost superfluous, because the green of the herbs appears in every dish at Byliny, be it as a salad, sauce or a little icing on the cake. The fact that the word "byliny" comes from Slovakian has little to do with the cuisine here. Byliny, which is a perfect fit for Bilk because of its name alone, stands for home-style cooking that is rarely found today: old classics such as roulade, cordon bleu or pork cheeks are revisited at Byliny, with new modern combinations and interpretations. The restaurant draws passionately on the wealth of seasonal ingredients - culinary surprises are not to be neglected. The owners, Norman Metzing and Micha Caasmann, know each other from their days at the Hyatt Hotel in Düsseldorf and are supported by Caroline, formerly of the Breidenbacher Hof. They do everything they can to make guests feel comfortable and at ease - even at the tables outside on the sidewalk in summer. The interior, which was designed by Düsseldorf-based SOHOarchitects, is based on the petrol blue of the wall surfaces, against which both the green of the herbs and the brass gold of the minimalist bar counter develop a very special radiance. A plant painting by Stefan Kaluza at the head of the restaurant imaginatively expands the elongated space. "Young, fresh, cool - but with tradition" - that is Byliny's motto. In culinary terms as well as in terms of design and aesthetics.
