The New "Brunner" in a Meticulously Restored Historic Residence
Nearly 3,000 Austrians call Stuttgart home, though the city's admirers of the neighboring country are surely far more numerous. Perhaps it's Stuttgart's fascinating past – including 15 years as an Austrian city (1520–1534). But more likely, it's the region's exceptional cuisine that truly captivates. That culinary tradition now thrives at Brunner, a new restaurant housed in a charming corner building on Rotbuchplatz, which opened late last year.
Converting the former sushi locale into an Austrian dining destination took two years of bureaucratic patience, but it was worth the wait. The opening itself became a proper celebration: after months of anticipation, final approval arrived just before Christmas. The team threw an intimate gathering on Saturday in the lovingly restored historic rooms – complete with standing drinks and Austrian nibbles – before the official launch on Christmas Eve. Birgit Grupp, a seasoned Paulaner hospitality veteran, now leads the venture alongside her niece Ayleen Brunner and Ayleen's partner Jakob Transier. The menu showcases Austrian classics reimagined with contemporary flair, all within an inviting, modern setting. Stuttgart-based interior architect Cyrus Ghanai crafted every detail with remarkable care, creating intimate corners perfect for regulars and friends alike. His signature touch? Natural wool felt covering walls and ceiling – a clever design choice that dampens sound and ensures a serene atmosphere, even when every seat is taken.
Creating an intriguing counterpoint to the felt finishes, the column, walls, and counter front feature glazed stove tiles in a striking blue tone—echoed throughout the seating in benches and chairs. The 95 m² ground floor showcases tiled surfaces, while upstairs, herringbone parquet warmth defines the space. Every table and bench was custom-designed and crafted exclusively for this restaurant.
