Ensemble of three new restaurant buildings - based on traditional Black Forest architecture

A fire in January 2020 completely destroyed the 230-year-old main building of the Hotel Traube Tonbach, including the restaurant. Despite the immense loss, it quickly became clear that the traditional building would be replaced by a new one. ARP Architektenpartnerschaft Stuttgart was commissioned to design three individual buildings - based on a Black Forest farmstead - which form a harmonious ensemble within themselves and with the existing building. Characteristic of traditional Black Forest architecture, the façade facing the street is rather closed and towards the valley, generous glazing and terraces open up the view of the landscape. Natural materials such as grayed wooden shingles, coarse plaster and the tiled roof are at home in rural areas. The granite paving and the clay wall of the outdoor area are continued in the foyer, connecting inside and outside. 

The centrally located foyer leads to the three buildings, each with a restaurant. The three-star restaurant "Schwarzwaldstube" is characterized by its considerable room height, the visible wooden supporting structure and a fully glazed gable. The wooden cladding as well as the large granite slabs and the imposing light object give the room an expansive feel. The former farmhouse parlor is now home to the one-star restaurant "1789" - a tribute to the founding of the "Traube". Small perforated windows, clay plaster walls, oak floors and surrounding benches create a cozy atmosphere. The "Schatzhauser", the former "Köhlerstube", with its blackened walls and ceilings and dark end-grain wood floor, is reminiscent of the charcoal burners' guild. On the upper floor, the "Quartier" with its large sliding doors to the covered terrace offers space for events. The complex service and kitchen area extends over two floors and takes up around half of the usable area. A separate technical center per building reduces both construction heights and distances. The waste heat from the combined heat and power units is used for heating, while the waste heat from the cooling system is used to heat water.
